A crunchy biscuit packed with local Fukui young ginger. The ginger is candied with organic beet sugar and has a slightly spicy taste that adults will enjoy.
Due to local weather patterns, ginger grown locally in Fukui is limited to young ginger. It can only be harvested once a year, and is only available for a short period of time. Therefore, we can only make these snacks for as long as our candied ginger stock lasts

This cracker/biscuit is a salty sweet Japanese flavored snack made from organic rice flour grown from organic rice in Fukui, and organic miso made from naturally fermented ingredients in traditional wooden barrels.
These ingredients are specialty goods made locally. This snack goes well with green tea.

This biscotti is made with a mix of organic whole grain and white flour. It is a dense and sturdy biscuit made with locally grown mikan (Japanese Mandarin Orange) peel in a wonderful combination with cacao nibs.
It can be enjoyed both plain or with a hot drink.

A granola inspired cookie made with organic flour from Fukui, is a satisfying and familiar tasting cookie. Full of nuts, seeds, and dried fruit.

Asasumi (hemp charcoal) cacao almond cookies are made with Japanese hemp charcoal. The charcoal has detoxifying properties and is made from the stems of hard to obtain Japanese hemp plants. Hemp is a plant that has been grown by humans since ancient times. It is viewed as an important holy plant and used with reverence. Because hemp grows quickly and makes big widespread roots, it is thought to have effects in aiding growth and development, prosperity, and prosperity of descendants.

This cookie is made from Echizen makomo (Manchurian wild rice) leaf powder mixed with rice flour and sesame seeds. Makomo is a plant that has been used for a very long time in Buddhist and Shinto ceremonies in Japan. It is an ancestral plant of rice and a perennial plant in the gramineae (rice grass) family. In Japan it is known for its detoxifying and health benefits. It has an unusual but addicting flavor.

Made with naturally grown wakame seaweed harvested from the sea coasts of Echizen. It is a famous local ingredient known for its rareness and valuableness. As it can only be harvested for about a month, from mid April to the end of May, the amount of this wakame seaweed available is very limited. It is highly treasured due to it’s high amounts of amino acid and natural sugar, and is specially sun dried. We hope you enjoy the flavors of the sea!

A savory cracker made with Fukui local specialty fermented mackerel “‘heshiko”. A simple but flavorful cracker, as it uses two different fermented ingredients; heshiko and sake lees.
